Tasty Tuesday: Pasta Carbonara

I'm playing catch up! Here ya go!

PASTA CARBONARA
1 pkg pasta of your choice
1.5 cups frozen peas
6 strips of center cut bacon
1 cup parm cheese
1 small onion
1 tsp thyme
1 tsp garlic powder
1/2 cup half and half

Cook the pasta as directed on box, during last three minutes add frozen peas and continue cooking.

Meanwhile crisp the bacon in a large saucepan. When done, remove and set aside. Dispose of all but 2 tsp bacon drippings. Use remaining 2 tsp. to saute the onion, chopped, for three minutes. Add thyme and garlic powder and saute for one more minute.

Drain pasta, reserving 2/3 cup of the water. Pour the water and pasta and peas into the sauce pan with the onions and spices. Add the parm cheese and half and half and toss. Continue cooking 2-3 minutes or until sauce thickens slightly (turns creamy). Crumble bacon on top and serve while hot.
