Tasty Tuesday: Easy Tilapia with Re-Run Risotto

Not really sure these two recipes go together, but we ate them together! :-)

Easy Tilapia
As a person who has just recently started eating/cooking fish (my dad didn't like it growing up, so my mom never made it- therefore I didn't know much about what types I would like or how to prepare...) I have found Tilapia to be mild and easy to prepare.

You will need:
1 Tilapia Filet per person you are serving (I used individually frozen ones from Costco)
Chili powder
Lime Juice
Salt & Pepper
1/2 stick butter
3 cloves garlic

Preheat the oven to 400 degrees. Chop or press the garlic cloves and put into a microwavable dish with the butter. Melt for 45 seconds in the microwave. Place frozen fillets on a foil lined baking sheet (foil = easier clean up!). Brush the butter/garlic mixture onto the frozen fillets. (The butter will solidify a bit again, but it stays on an evenly distributed) Sprinkle a generous amount of chili powder, squeeze the juice of a lime all over the tops of the fillets, sprinkle lightly with salt and pepper and bake for 30 minutes. The fish should be tender and flake easily with a fork (and be completely white) when it is ready. Yummy :-)


Re-Run Risotto
I decided to take some leftover white rice, and make it exciting again :-) It came out really great!

You will need:
Cooked white rice
3/4 cup hot tap water
1.5 cups Parmesan cheese
1/2 tsp garlic powder
1 tsp oregano
1 tsp basil
salt and pepper to taste

Place the rice in a pot on the stove and add the water. Warm over medium-low heat, cover and let heat for 5-7 minutes. Add the Parmesan cheese .5 cup at a time and stir in between. Add the remaining ingredients and serve hot. Great way to freshen up some ole' leftover rice!
