Tasty Tuesday: Three-Cheese Stuffed Shells

This recipe is one that is often requested when I am cooking for guests. It's fairly easy to pull off, but it does take a little time.

What you'll need:
1 box of Barilla Jumbo Pasta Shells
1 larger container of ricotta cheese (I recommend part skim if you're watching calories)
1 ball of mozzarella cheese
1 container of shredded Parmesan cheese
1 jar of your favorite spaghetti sauce (I like Prego Tomato and Basil)
2 teaspoons of fresh parsley (optional)

What to do:
1. Boil the shells as directed on the box. Drain and rinse in cold water.
2. Grate the mozzarella cheese ball.
3. Mix 1/2 of the mozzarella cheese, all of the ricotta cheese and 1/2 of the Parmesan cheese together in a bowl. If using parsley, add to cheese mixture.
4. Pour 1/3 of the sauce into a glass baking dish. (13 by 9)
5. Begin stuffing each shell with the cheese mixture, then place in the baking dish.
6. When all shells are stuffed, pour remaining sauce and sprinkle remaining mozzarella and Parmesan cheeses over the shells.
7. Cover with foil and bake for 35 minutes at 375.
8. Remove foil and bake for 5-7 more minutes or until cheese bubbles and slightly browns.

Allow to cool 5 minutes before serving.
