Tasty Tuesday: Last Minute Lasagna

Yet another fabulous recipe courtesy of Real Simple Magazine (I found this one in their book that I recently ordered from Borders, Meals Made Easy)

This is SO easy to make and so tasty- it'll be a hit in your house for sure!

Last Minute Lasagna
1 jar of your favorite pasta sauce
2 pkgs of raviolis from the refrigerator section (I used Trader Joe's 4 Cheese Jumbo Raviolis)
1 large package of grated mozzarella cheese (I used 2% skim to save on calories and fat)
1/2 cup of Parmesan cheese, shredded
1 pkg of frozen or fresh spinach
2 tbsp of dried parsley

How to put it together (this is so easy, I'm telling you!)
-Cook the spinach and drain (press against strainer with paper towel to get rid of excess moisture)
-Preheat over to 375
-Pour 1/3 of the sauce on the bottom of a large rectangular baking dish

-Place 1 pkg of raviolis in rows across the bottom to make the bottom layer
-Spread spinach on top of raviolis
-Spinkle half of the mozzarella cheese on top of the spinach
-Pour 1/3 of the sauce over what you have so far
-Make another layer of raviolis with the second package
-Pour the remaining sauce and spread with a spoon
-Sprinkle remaining mozzarella cheese, parm. cheese and parsley over the top
-Cover with foil and bake for 30 minutes
-Remove foil, bake for 7 more minutes
-Set to broil for 2-3 minutes until golden and bubbly
-Let stand 5 minutes before serving
