Tasty Tuesday (late): Super Soup

This soup is so yummy, we always have to have seconds. The one drawback, you'll need access to a Trader Joe's for some of the ingredients. I will do my best to list adjustments if you don't have one.

Super Soup

6 pieces of bacon
1 box of Trader Joes Sweet Corn and Red Pepper Soup (substitute with corn chowder type soup with added black pepper for kick perhaps?)
1 container of Trader Joe's Mirepoix (2 cups of finely chopped carrots, celery and white onion)
2 cups of cut up potato
1 cup chicken broth
2/3 cup half and half
Salt and Pepper to taste

How to prepare it:
-Cut the bacon into 1 inch pieces and cook over medium heat in the bottom of a large pot. When cooked, remove the bacon pieces and place on a paper towel lined plate and set aside.
-Drain 1/2 of the bacon grease and dispose. With the remaining bacon grease in the pot, saute over medium the mirepoix until the onions begin to become translucent (3-4 minutes), then add the potatoes and continue to saute for 4 minutes.
-Add the contents of the soup box and the chicken broth.
-Allow to simmer over medium heat until the potatoes are softened (15-20 minutes).
-Add the half and half and simmer for 2 minutes more.
-Ladel into bowls and crumble the bacon on top
-Add salt and pepper to taste if desired.

I usually serve this with a thick crusty bread, broiled with butter and a little bit of cheese on top :-)
