Tasty Tuesday: Cracker Candy

Tasty as toffee but easier to make!
This fabulous recipe came to me by way of interviewing for staff- this is what one of my awesome new teachers taught for her teaching demonstration:
CRACKER CANDY
  • 1 sleeve saltine crackers
  • 1 cup (two sticks) butter
  • 1 cup white sugar
  • 1 bag chocolate chips
  • 1 bag peanut butter chips
  • rainbow sprinkles (optional)
DIRECTIONS
1. Preheat oven to 350 degrees.
2. Spread crackers on a foil lined baking sheet in a single layer, no need to smash.
3. Heat butter and sugar over medium-low heat until butter is thoroughly melted and incorporated with sugar- should bubble for a few minutes and be smoothly pourable.
4. Pour butter mixture over crackers and spread evenly.
5. Bake for 15 minutes or until bubbly and lightly golden-watch to avoid burning.
6. Take out of oven, pour peanut butter then chocolate chips over hot crackers and spread until smooth with a spatula.
7. Sprinkle with rainbow sprinkles and cool in refrigerator or freezer (if you want to eat 'em faster like we did!) until hard. Break off pieces and enjoy!
