Fancy Schmancy Eggy Morning Bread

As you can tell by my title, I'm not really much of a food snob. Most things I make are more "down home" than gourmet- but the key for me is for the food to taste good and hopefully look good too.

I decided to try a modified version of a breakfast food I'd seen on Giada DeLaurentis' Everyday Italian show. (I personally don't like eggs, but the hubby and kiddo do, so I made it for them :-))

Fancy Schmancy Eggy Morning Bread
Foccacia loaf or foccacia rolls (I used rolls)
Olive oil (about 1-2 tbsp)
3 Eggs
1/2 cup shredded mozzerella cheese
1/2 cup of milk
Salt and pepper

1. Pull the center of the loaf of bread/roll out with your hands. Hollow out a trough down the center of the loaf. Then brush the inside of the "bread shell" with olive oil evenly.
2. Bake the bread shell(s) in the oven until lightly crispy (about 8-10 minutes at 425)
3. Turn the heat down to 375.
4. Whisk together the three eggs, milk and cheese.
5. Tear bread insides into 1 inch pieces
6. Toss bread in egg mixture until thoroughly moistened.
7. Pour egg/bread mixture into bread shell(s)
8. Place in the over on a cookie sheet for 15-20 minutes for rolls or 30-35 minutes for one large loaf. Check occasionally to avoid overcooking.
9. Sprinkle lightly with salt and pepper to taste.
10. Slice and serve!
