Comfort Food: Easy French Onion Soup

For me, on a cold winter night nothing is quite as comforting as a good bowl of soup. Today was a rough day and I needed some comfort!

I absolutely love good French Onion Soup but I had never tried to make it myself, that is, until tonight :-) I am so glad I did! It wasn't very hard and it was very satisfying.

Here is how to make some for yourself:
Homemade French Onion Soup
What you need...
4 yellow onions
olive oil (about 2 tbsp)
1/4 tsp sugar
2 cloves of garlic, chopped finely
1 container of Swanson Beef Broth
1/4 cup dry white wine
1/4 tsp dried thyme leaves
1 bay leaf
Pepper to taste
Sliced crusty bread and sliced cheese of your choice for topping

1. Heat the oil in a stock pot over medium heat then add the onions and cook, stirring often until quite soft. After the first 7-8 minutes, add the sugar. Continue to cook for 15-20 minutes, onions will be golden brown. Do not allow to burn, turn heat down if necessary.

2. Add the garlic and cook with the onions for 1 minute.

3. Add the beef broth, wine, thyme and bay leaf and cover. Allow to simmer for 15-20 minutes.

4. Add pepper to taste (shouldn't need salt) then ladle into oven safe crocks.

5. Place a piece of bread then a slice of cheese to float in the soup and then broil until the cheese turns golden and bubbly.
