Food Changes...

As I mentioned in a previous post somewhere in the past month, I've been experiencing some health problems, and it appears as though the root cause comes down to an inability to tolerate gluten. Whether it is Celiac Disease or simply an intolerance, I have yet to find out (I will need to have some tests done that will cost me a whole lot, so I am putting off at the moment...). But anyway, I have to eliminate gluten from my diet- which means no wheat products whatsoever. So, it is likely that the type of recipes that I post will also mostly be gluten-free. Now, believe me, there are a ton of things that I can still eat- just not wheat/flour/bread products. So I promise I will still only post the tastiest recipes! :-)

Here is a picture of steak fajitas. I didn't use a fancy recipe, just used a packet of fajita mix and followed the directions on the back- but I just love how colorful food looks. So tasty- and... gluten-free :-) (As long as you don't eat them on flour tortillas ;-))
