Tasty Tuesday: (late) Taco Casserole

Yup, that's right, I said casserole- now don't you go running, this is a GOOD casserole :-) Easy, tasty and well, tasty!

Taco Casserole

You will need:
Cornbread batter (whip up a batch from the recipe on back of your cornmeal box)
Taco Seasoning packet
Ground Beef (1 lb)
1 can of corn
Shredded cheese (2 big handfuls)
1 small can of green chilies, diced
*Note, I don't like tomatoes, but if you do, add 'em! You could add diced onions if you wanted too.

What to do:
This is nice and easy folks. Spread the cornbread batter on the bottom of a glass baking dish. Brown the beef and prepare with taco seasoning as directed on the seasoning packet. Add the meat on top of the bread batter (I have a thing about ground beef- so I put it in the food processor after I finish browning it because I don't like big chunks of it- I like it more like Taco Bell beef, lol). Then, layer your other selected ingredients and bake for 20-25 minutes at 400 degrees.

Serve with sour cream and hot sauce :-) and chips too if you're being naughty!

  2. I have a casserole like that too. You crunch up taco chips on the bottom, put your taco meat over the top of that, then a can of Cambells Fiesta Nacho Cheese soup, then shredded cheese and bake at 350* for about 30 minutes. Then you can top with sour cream, lettuce, tomato, olives, whatever . . .
