How to Make Chipotle Style Chicken Bowls @ Home (and diet friendly!)

I love Chipotle. If you read my blog with any regularity, you are already well aware of that. I just LOVE LOVE LOVE their food. I love eating all of the veggies I get in my bowl- knowing it's good for me and it tastes good. I love getting barbacoa, since I rarely cook red meat at home. There is RARELY a time I would rather not eat at Chipotle. Last time I can recall, I was pregnant and dealing with all-day sickness. (Guys: morning sickness is a joke- it does NOT stick to mornings. False advertising)

Anyway, I wanted to make something Chipotle-esque at home that also allowed me to keep to my Weight Watcher's eating plan. So here's what I made (and you can make too!)...

1. Shredded Chicken
This part is EASY. You get out your crockpot, and add the following spices:
1 tsp chili powder, 1 tsp garlic powder, 1.5 tsp cumin, 1 tsp salt, 1.5 tsp oregano
And then you add 3/4 cup of water and three chicken breasts (to serve 3-4 adults). If you like onions, toss in 1/2 of a medium yellow onion, diced finely. Crank that baby up to high (if you start around lunch time) or turn it to low if you're simmering all day. When you are getting ready for dinner, shred the now super tender chicken with two forks. It will take you 28 seconds. It's AWESOME.2. Whip up a batch of Gina's Chipotle style rice.

3. Put out small bowls of chopped romaine lettuce, shredded low fat Mexican cheese, light sour cream and salsa. (I like hot sauce too :-))

4. Pile 1 cup of rice with 1 cup of shredded chicken with two handfuls of lettuce, 1/4 cup of cheese, 2 tbsp of sour cream and hot sauce to your heart's content for a DELICIOUS 10 WW point meal. Feel free to adjust quantities to suit your point needs, or eliminate sour cream OR cheese to shave off a few points. (I used 1 tbsp sour cream and 1/8 cup cheese)This recipe has been husband tasted and approved! :-)
