Fast and Easy Dinner: Garlic chicken skewers

This one is for Kristin, who has requested more fast dinner ideas :-) (More to come too!)

Garlic Chicken Skewers
What you'll need:
1 boneless, skinless chicken breast per person you're serving, cut into bite sized pieces
1 tbsp lemon juice
1/2 tsp Lawry's seasoned salt
1/2 tsp ground black pepper
3 cloves of garlic, grated/pressed/minced really finely
2-3 tbsp of olive oil

What to do:
1. Mix all ingredients in a glass bowl and allow the chicken to marinate for 15-30 minutes (I just let it sit while I prepared my side dishes). Picture is of the marinade, ready for the chicken to dive on in.2. Heat up a pan to medium high heat, (preferably a grill pan if you have one) and spray with a little cooking spray.
3. Skewer the chicken onto wooden skewers, or skip this step if you're really in a hurry! It's more a presentation thing anyway,you can just toss 'em in the pan. ;-)
4. Place the skewers in the pan, and flip so that all sides get a nice searing/grill marks and cook until chicken is cooked through.For my quick dinner, I also made some of Gina's Weight Watcher Friendly Baked Zucchini sticks and heated a few rolls I had from Fresh and Easy in foil, in the oven while the zucchini baked. Start to finish, this meal took a max of 30 minutes.
