Quick and Easy Stir Fry Dinner: Ready in a flash!

This is a recipe for one of my go-to meals when I am getting dinner started late and am HUNGRY. Like eat my left arm hungry. (Not my right, I am right handed, and I need my right arm for future cooking ya know.)

Quick and Easy Stir Fry a la Blonde ;-)
What you need: (this feeds my family of three, one with a smallish appetite included)
2 good sized boneless skinless chicken breasts, cut into 1 inch pieces
3 packages of ramen noodles
1/2 a bag of frozen broccoli
1/2 a bag of frozen carrots
2 cloves garlic, finely chopped
3 tbsp honey
3 tbsp soy sauce (I use lower sodium)
1/2 tsp crushed red chili flakes
2 tbsp olive oil, divided
1 microwave steam bag

What to do:
1. Heat 1 tbsp oil over medium heat in a large pan.
Add garlic and stir until golden and fragrant (not brown!).
Add chicken and cook until all chicken pieces are white.
2. Boil the water and cook the noodles on the stove as directed.
Drain and coat with the remaining olive oil.
3. Use the microwave steam bag to cook the frozen vegetables.
The bags usually tell you how many minutes you need
to microwave them for based on the contents.
4. Mix the honey, soy sauce and chili flakes thoroughly,
and add to the chicken. Continue cooking until the sauce turns
more golden/reddish brown and just begins to get stickier/caramelized.
5. Remove the chicken from the pan and set on a plate.
Add the vegetables to the pan with sauce "remnants"
and stir fry over medium-high heat for 2-3 minutes. Then add to the chicken plate.
6. Add the noodles tossed with oil to the pan and stir fry for 3-4 minutes
(best to use a non-stick pan- thought I'd be ok since I used oil... not so much).
7. Plate the noodles and top with the veggies and chicken.

Yes, I really did just tell you to cook dinner with ramen noodles.
I love this little "measuring glass".
I always use it when I'm mixing up the honey and soy mixture.
