My go-to fast + healthy dinner

I thought sure I'd shared this before, but I can't seem to find it, so here is my recipe for tofu stir fry. If you do not like tofu, or are not sure if your family will like it, I'm begging you to try it this way (I don't eat it any other way personally, but I LOVE it like this!) I think you'll like it too.
This recipe goes from start to finish in 15 minutes! (And is nothing fancy at all- but tastes great)

Stir Fried Teriyaki Tofu w/ Veggies and Noodles

What you'll need:
olive oil spray
1 package of firm tofu
1 bag of fresh vegetables for stir frying (the kind you can steam in the bag in the microwave)
Soy Vay Teriyaki sauce
3 packages of ramen noodles

What to do:
1. Put a pot of water and prepare the noodles as directed (omitting the seasoning packet step and draining completely when cooked).
2. Place a large pan on the stove over medium high heat. Spray with olive oil spray.
3. Cut tofu into small, bite sized pieces, then toss in the pan. Stir frequently. Tofu edges will turn golden after 2-3 minutes.
4. Steam the vegetables in the microwave as directed, but cut the cook time by 30 seconds.
5. Add two tbsp on the Soy Vay to the tofu and stir. Cook tofu 2 additional minutes, then remove from pan.
6. Add the vegetables to the pan and add 1 tbsp Soy Vay, stir fry for 2 minutes, then remove from heat.
7. Serve the noodles in a bowl, with the veggies on top and finish with the tofu.

Enjoy- with chopsticks maybe? :-) Yum!!!
