Tasty Tuesday: Homemade crepes

My favorite crepe filling is sliced, fresh strawberries, but you can fill these basic crepes with any combination of delicious things you like.

Basic Sweet Crepes
2 eggs
1/2 cup non-fat milk
2/3 cup water
2 tbsp vegetable oil
1 tsp vanilla extract
1 1/3 c. sifted flour
1/2 tsp salt
2 tbsp sugar

1. Beat together the eggs, milk, water, oil and vanilla. Then, incorporate the dry ingredients and whisk until smooth.
2. Heat a non-stick pan over medium-high heat, melt a little butter into the pan and pour batter into the pan.
3. Rotate the pan immediately until batter coats the entire bottom of the plan, then return to burner
4. Flip when slightly golden, approximately 1 minute and cook on the other side.
5. Remove from pan and wrap around your favorite filling.
