Tasty Tuesday: Easy Pizza Roll Ups

Looooong time no post- I know, I know.  Please forgive me- this is my busiest time of the year work-wise and most work days are currently running from around 8am until midnight with only a break for dinner and kiddo's play/bedtime from 6:30-7:30 or 8.  (Thank God for my husband and all of his help and my other close family!)

However, without further adieu, an easy and tasty recipe for you!

Easy Pizza Roll Ups

1 pkg store bought pizza dough
2 cups mozzarella cheese (freshly grated)
1/2 pkg turkey pepperoni
1/2 jar store bought pizza sauce
2 tbsp olive oil
2 pinches kosher salt
flour for rolling pin/work surface

What to do:
1.  Preheat the oven to 425 and move the rack to the bottom third of your oven.
2.  Lightly flour your work surface (I like to use a plastic place mat or cutting board) and rolling pin and roll the dough to a circle 1/4 inch thick.
3.  Spread the pizza sauce evenly on the dough with a spoon/back of a spoon.
4. Lay the pepperoni all across the dough/sauce evenly and in a single layer.
5. Sprinkle evenly with cheese.
6. Roll the dough into a log shape and lay on a baking sheet, seam side down.  Pinch and fold the ends shut.
7. Brush with the olive oil and sprinkle with the kosher salt.
8. Bake for 20 minutes or until lightly browned on top.
9. Let sit for 5 minutes, then slice into wheels and serve.
10. Enjoy of course! ;-)
