Tasty Tuesday: Mac n Cheese with Bacon

This is pretty much the greatest comfort food of all time.  Let's see- you've got butter, cheese, pasta and BACON!  Oh, and the Kraft stuff in a box is NOT invited.  Sorry- hope you don't get the blue box blues! ;-)

Let's get started...
Mac n Cheese with Bacon
Ingredients:
  • 1 lb elbow macaroni
  • 16 ounces shredded sharp cheddar cheese (shred it yourself, do NOT use preshredded)
  • 3 tbsp butter
  • 1/3 cup flour
  • 21/2 cups half n half
  • 1 tsp kosher salt
  • 1/2 tsp paprika
  • 1/4 tsp nutmeg
  • 1/2 tsp ground black pepper
  • 9 slices of thick cut, center cut bacon
What to do:
1. Begin by preparing the elbow macaroni as directed on the package.
2. Starting with a cold pan, lay out the 9 slices of bacon and heat over medium heat on the stove, flipping occasionally until crisp.  Allow to cool on a plate layered with paper towels to absorb excess grease.
3. Melt the butter in a heavy saucepan over medium heat.
4. Sprinkle the flour over the butter and whisk quickly until smooth (you are creating a roux).  Cook the roux until lightly golden approximately 2 minutes.
5. Lower the heat to just a tad below medium (my dials have numbers, 1-10, I went down to a 4) then pour the half n half into the roux pan in one steady stream while whisking with the other hand.
6. Whisk the cream/roux until smooth and allow to simmer/thicken 5 minutes, stirring occasionally.
7. Turn off the burner and mix in 2/3 of the cheese.  Stir until melted and evenly mixed.
8. Toss the pasta with the cheesy sauce and pour into a large glass baking dish.
9. Roughly chop 8 pieces of the bacon and sprinkle over the macaroni.
10. Sprinkle the remaining cheese evenly over the whole dish.
11. Eat that 9th piece of bacon because you deserve it.
12. Bake the macaroni at 375 for 25 minutes, then broil for 3-5 minutes until bubbly on top.

*Note, I made this recently for friends, but forgot to take a photo.  I remade this tonight for my husband's work potluck tomorrow, but I only have a picture of the unbaked dish because he's baking it at work- SO, if he comes through for us, I'll add a finished product picture tomorrow- no pressure or anything babe! ;-)

  1. This looks awesome, even if step 8 doesn't say "Toss the pasta with cheesy sauce and pour yourself a glass of red wine." as I thought it did on my first read. I may have a problem! :)
