Tasty Tuesday: Simple and Tasty Chicken Pot Pie

For our family, fall is all about comfort food.  (The hubs may or may not currently be at the store hunting down some peppermint stick ice cream- one of the good things about stores preparing for holidays WAY too early :-))  This week, we finally got a boost of chilly weather (and I'm pretty sure we've all got our fill and are ready for 75 degrees again, wishful thinking there, I know).

One of my favorite comfort foods is chicken pot pie.  Here is the recipe I made up when I wanted to serve up my own pie.  I confess I didn't use exact measurements, so I will guesstimate as best I can.

Simple and Tasty Chicken Pot Pie
Ingredients:
1 box prepared pie dough (double crust)
3 stalks celery, chopped
4 carrots, sliced
1/2 medium onion
2 cups diced chicken breast 
(I used precooked chicken breast from Fresh and Easy, 
you could also use shredded rotisserie chicken)
1 cup chicken broth
1 tbsp butter
2 tbsp flour
1/4 cup dry white wine
1 egg white
2 tbsp water
salt and pepper to taste

What to do:
1. Melt the butter in a large sauce pan, when melted, add flour and whisk to create a roux.  Allow to brown slightly (whisking constantly) cooking over medium heat 1-2 minutes or until golden brown.
2. Add the carrots, celery and onions to the roux and stir, cook for 1 minute.
3. Add the chicken broth and stir, broth should thicken as it mixes with the flour from the roux.
4. Cook for 3-4 minutes, stirring occasionally.
5. Add the wine, allow to cook (should bubble) 5 minutes.  Season with salt and pepper to taste.
6. Add the peas and chicken, stir and cook 2 more minutes while you line a pie dish with the bottom crust.
7. Pour the contents of the saucepan into the pie dish over the bottom crust.
8. Lay the top crust over the pie and roll the edges under.
9. Using a fork, seal the crust edges by pressing down and creating lines.
10. Using a fork again briskly stir egg white and water, then brush lightly over the top crust of the pie.  
This will make it nice and golden and flaky on top.
11. Bake for 40-45 minutes at 400 degrees, allow to sit for 5 minutes before serving.
