Tasty Tuesday: Baked Tortellini with Bacon

Martha Stewart's Everyday Food Magazine and their BACON feature AND a tortellini feature in this month's issue definitely made this girl happy!  Tried this recipe and loved it SO SO much.  Hope you enjoy it too!

Baked Tortellini with Bacon (Adapted from Everyday Food, Dec edition)
-4 slices bacon (I used extra thick)
-1 small white onion, diced medium
-1 garlic clove, minced
-coarse salt and ground pepper
-1 tbsp flour
-2 cups whole milk (I used 1 cup half n half and 1 cup 1% milk)
-2 packages cheese tortellini (8.8 ounces each)
-1/2 cup grated Parmesan
-1/2 cup grated mozzarella (my own addition)

What to Do:
1. Heat broiler with rack in top position.  In a medium saucepan, cook bacon until browned and crisp (about 10 minutes) transfer to a paper towel to drain.  Add onion and garlic to the saucepan with bacon grease and season with salt and pepper.  Cook, stirring occasionally until onion is soft, about 8 minutes.  Add flour and cook, stirring, 30 seconds.

2. Slowly add milk, whisking constantly.  Add tortellini and bring to a boil over medium-high, stirring occasionally.  Reduce to a simmer; cook, stirring often, until liquid has thickened (about 4 minutes).  Remove from heat; stir in 1/4 cup of Parmesan and transfer to a 2 quart broiler proof dish.  Top with crumbled bacon, remaining Parm and mozzarella.  Broil until top is golden brown, 3-5 minutes.
