What's for dinner this week?

Well, let's see- currently, I am in the process of re-doing Keegan's bedroom as I'd mentioned and I kind of overstretched my budget in purchasing a bed for him on Craigslist during a tight payroll period.  But, I couldn't resist, as it was SUCH a great price and a cool, old, solid wood bed- I thought maybe I could squeeze it in.  Well, that was partly awesome and partly stupid because it really cut into my grocery budget this week.  So, in addition to making sure my meals were a. things the family would eat, b. weight watcher friendly they also had to be c. DIRT cheap! ;-)

So friends, this is not a gourmet/foodie's dream meal plan- but it'll work, and may help you when you have a tight week too sometime.  It will be worth it when Keegan's room is all redone! :-)

Sunday: Pioneer Woman's Sour Cream Enchiladas (made Weight Watcher friendly by me, recipe to come Tuesday)
Monday: French Onion Soup with (toasted baguette slices topped with melted cheese, also, in this recipe, I use cooking sherry vs. red wine, if you care, lol)
Tuesday: Spaghetti and green salad (Yeah, you don't need a recipe for this, haha!)
Wednesday: Roasted Garlic Chicken and Veggies w/ Rice Pilaf (smash 10-15 cloves of garlic, add to 3 tbsp olive oil, 3/4 tsp salt and 1/2 tsp pepper and toss with chicken breasts sliced in half lengthwise and broccoli and cauliflower florets.  Roast at 450 degrees 15-20 minutes.)
Thursday: Ramen noodles with stir fried tofu (with General Tsao Stir Fry Sauce) and peas (Ramen for dinner! See? I TOLD you it was budget week here! haha)
Friday: Left overs or pizza night (payday!)
Saturday: Date night

So... plating enchiladas in a pretty way = hard!
