Perfect Bacon- The Secret!

I FINALLY learned how to make perfectly crisp NOT burnt bacon!  In this month's Cooking Light, the very last page taught me the secret :-)

I had tried broiling the bacon, pan frying it on medium, starting with the pan cold, pan frying on medium high- multiple ways.  But, I always ended up with either burnt bacon or bacon that wasn't crisp enough for my liking.

BUT, Cooking Light says to line a rimmed cookie sheet with foil and rest a cooling rack on top.  Lay the bacon flat across the cooling rack.  Place in the oven (you can preheat) at 400 degrees for 20 minutes.  You don't even have to flip it!  I tried it this weekend- and voila!  PERFECT!  I will be sticking with this method from now on.  Thanks Cooking Light! :-)

  1. i need one of these NOW! i usually bake it, but then it soaks in the grease and i have to squeeze all of the grease out.

  2. lol, I actually love my bacon slightly burnt. ;) So I love frying it. However, I bet if I left it in more than 20 minutes this would turn out the same way but without the grease. I'll give it a shot!

  4. The cooling rack is a great item for the oven. I used it last night making garlic bread. I was using thinner bread and this helps keep the bottom from getting too soggy.
