Recipe: Maraschino Cherry Bites

Ever have one of those nights where you just can't quell your sweet tooth and want to be able to whip something up without going to the store?  I had one of those this past week, (I had lots of Weight Watcher points left over one evening- woot!) and stumbled upon an intriguing recipe on TastyKitchen by the user CreationsbyKara called Marachino Cherry Bars.  The recipe only called for ingredients I actually had AND the prep time was just 10 minutes- SCORE!

I did make a few of my own modifications to the posted recipe, so the recipe I am sharing here is my "altered version".  I encourage you to visit the original recipe (link above) and add your own twists!

Maraschino Cherry Bites
  • 1 cup sugar
  • 1 cup softened butter
  • 1 egg
  • 1/2 tsp vanilla
  • 1 1/2 tsp almond extract
  • 2-¼ cups flour
  • ⅛ tsp salt
  • ½ c. chopped maraschino cherries
  • _____
  • ½ c. powdered sugar
  • maraschino cherry juice
Cream sugar and butter. Beat in egg, vanilla, and almond extract. Stir in flour and salt, then the cherries. Chill in the freezer for 15 minutes. Pat dough into a lightly greased square baking pan, dough will be about 1 inch thick. Bake at 350F for 25-30 minutes or until the top and edges are just ever so slightly getting golden. Cool completely, cut into bite sized squares and drizzle with glaze.

To make the glaze, combine powdered sugar and enough cherry juice till you get the right consistency.

Recipe should make 64 bites and they are 2 pts each on WW PointsPlus for those of you wondering :-)
