Recipe: Beer Braised Beef over Garlic Mashed Potatoes

If you want to cook up some real "man food" (as beef and potatoes have been nicknamed in this house) this is a great, easy and tasty recipe that cooks most of the day in the crock pot. It is adapted from The Pioneer Woman's Beer Braised Beef with Onions.

What you need:
1 tri tip, large enough to feed your crowd (I used just under 2 lbs)
1 tbsp olive oil
1 tbsp butter
kosher salt
1.5 onions, sliced
5 cloves garlic
7 carrots, chopped
1 bottle of beer (any beer will work)
1 box instant mashed potatoes (I like the roasted garlic type)
and the ingredients needed to prepare them (usually milk and butter)

What to do:
1. Rub tri tip with salt and pepper, meanwhile melt butter and olive oil together over medium high heat in a large heavy pot or dutch oven.
2. Place tri tip in the hot pot and allow to sear on one side (2-4 minutes) the flip.  Remove tri tip and set in crock pot.
3. Add onions to pot with meat juices/butter/oil.  Allow to cook until softened, approximately 10 minutes.  Add garlic.  Add carrots, stir.  Cook 5 more minutes.
4. Add onion mixture to crock pot and pour in beer.
5. Cook on high heat in the crock pot for 5 hours or low if you have the majority of the day (8 or more hours).
6. When ready to serve, prepare mashed potatoes (I used instant, you can of course make them from scratch if you prefer) and spoon meat and carrots over mashed potatoes.  We also added a bit of sweet corn because I had it on hand in the fridge. (I also added extra ground pepper to my bowl, you may like to do so as well)
