Recipe: Garlic Chicken with Browned Butter & White Wine Orzo

I wanted to make something simple and flavorful, so I got to experimenting in the kitchen last night and was pleased with the final result.  I hope you enjoy this dish too.

Garlic Chicken with Browned Butter & White Wine Orzo
3 tbsp butter, separated
2 cups orzo pasta (I like Ronzoni)
1/2 c. dry white wine
2.5 c. chicken broth
1 lb chicken breast cut into 1 inch pieces
2 cloves garlic, peeled and minced
kosher salt, pepper
1/2 cup parmesan cheese, shredded
fresh parsley, chopped (optional)

What to do:
1. Melt 2 tbsp butter in a medium saucepan over medium heat.  Stir with a whisk until butter begins to brown.  Add dry orzo to butter and stir, allow orzo to brown slightly.
2. Add white wine to orzo, stir, cook until liquid evaporates.  Add chicken broth, stir and turn heat up to medium high.  Allow to boil, then reduce heat to medium low and cover.  Simmer until liquid is all absorbed.
3. Melt remaining 1 tbsp butter in a skillet over medium high heat.  Toss in chicken.  Season with 1/2 tsp kosher salt and 1/4 tsp pepper.  When chicken begins to brown, add garlic and reduce heat to medium.  Stir chicken often, cook until done.
4. When orzo has absorbed all liquid and is tender, add 1/4 tsp kosher salt, 1/4 tsp black pepper, and parmesan cheese.  Stir.
5. Serve chicken over orzo and garnish with fresh parsley (optional).
