Mama said "eat your veggies!"

But she might not have told you how darn tasty they could be!

I'm finally "back on the wagon" with Weight Watchers following the events of the month and I've found two DELICIOUS new ways to genuinely LOVE eating my veggies and thought you might like to give them a whirl as well.

Discovery #1: Alexia Spicy Sweet Potato Fries (slightly doctored)
With the recent remodel of my "home" Target (yes, I call it my home Target because a. Target kind of is my home away from home, and b. it's the specific store I frequent most and is closest to my home) many additional grocery items have become available, and the freezer cases are out of control stocked with AWESOME things- some products I've never seen anywhere before (seriously, I could have spent $100 on new frozen food there this weekend, if I'd you know, had a spare $100).  Anyway, before this turns into yet another Target love fest (yes, I could go on) let me introduce you to my new favorite frozen friend, Alexia's Spicy Sweet Potato Fries.

If you live locally, and have been to Eureka! Burger, you've likely tried (or seen) their special honey-cinnamon sweet potato fries.  They are amazing and I crave them on a regular basis.  However, they're restaurant fries and not-so-Weight-Watcher-friendly.  Solution?  Bake up a batch of the Alexia fries (you don't have to use the spicy version, it just suits my taste) and drizzle on 1-2 tbsp of honey and sprinkle on a little cinnamon- so. stinkin'. delicious!  The fries themselves are only 4 points for 30!  Honey is just 1 pt per tsp.  Sweet potatoes are great for you and have more nutrients and fiber than traditional fries.  Give this idea a shot will you?  I don't think you'll be disappointed!

2. Roasted Garlic Veggies
My oh my how Gina at has opened my eyes to a new and AMAZINGLY delicious way to eat veggies!  I can't believe I'd never tried roasting veggies before I stumbled upon her WONDERFUL website!  (If you are a Weight Watcher, or even if you're not, her recipes and equal parts healthy and delicious, you HAVE to check out her site!)  She taught me that all it takes is a couple tablespoons of olive oil, 6-8 smashed garlic cloves and a sprinkling of salt and pepper and a trip to the oven to make broccoli and cauliflower as addictive as chips.  I ADORE this recipe (I use cauliflower & broccoli) and we just had it tonight.  The garlic roasted vegetables are SO good, I doubled my vegetable serving and used my evening snack points on the second portion- do you know what this means?  I gave up my 3/4 cup of LUCKY CHARMS for BROCCOLI!  Crazy huh?  These veggies are that good.  Give them a try :-)
