Recipe: Toffee Crunch Cookies (via TastyKitchen blog)

I saw this cookie recipe on the blog, and I HAD to try it.  I love cookies with a good texture to them and come on, they had me at marshmallows! ;-)

I made this recipe over the weekend, and I'm going to declare it a winner.  Thanks TastyKitchen!

Toffee Crunch Cookies (Recipe created by Tasty Kitchen user "Shugary Sweets")

What you need:
  • 2 sticks Butter, Softened
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 2 cups Flour
  • ½ teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 2 cups Quick Oats
  • 1 cup Crispy Rice Cereal
  • 1-¼ cup Milk Chocolate Morsels
  • 1 cup Mini Marshmallows 
What to do:
1. Beat butter with sugars. Add eggs one at a time, then add vanilla.
2. Beat in flour, baking soda and baking powder.
3. Fold in oats, cereal, morsels and marshmallows.
4. Drop by 1-2 tablespoonfuls onto a parchment-lined cookie sheet. Bake in a 350ºF oven for 10-12 minutes. Makes 36 cookies.
