Recipe: Crock Pot Shredded Beef Sandwiches with Carmelized Onions

These sandwiches are so easy to put together and really tasty, you can't go wrong.  The only thing that has made me hesitate to post this recipe sooner is that it's tough to make a shredded beef sandwich look "pretty" in a picture.  So please, forgive my picture, but I promise the taste and ease in putting these babies together will make up for their semi-bland close up.

What you need:
1 tri tip (or beef loin tip) roast (1.5 lbs feeds 4 adults heartily)
1 pkg Au Jus mix
1 large onion
2 tbsp butter
1/2 tsp sugar
salt
pepper
1 roll or bun per sandwich you want to make
sliced cheese (if desired- I like to use Jarlsberg light swiss)

What to do:
1. In the morning, place the tri tip, contents of the Au Jus packet and 3 cups of water in your crock pot, set on low.
2. About 30 minutes before you want to serve to sandwiches, use two forks to shred the beef.  Allow to continue to cook on low afterwards.  Meat should be very tender and easy to shred.  (This recipe cooks best over 8 hours for 1.5 lbs tri-tip)
3. While the now shredded beef continues to absorb the flavors of the Au Jus, melt the butter in a heavy sauce pan or dutch oven over medium heat.  Sliced an onion lengthwise (root to tip) in half, chop off the top end close to the tip, then peel the onion skin away.  Make one slice down the center of each onion half, laying the flat side down on your cutting board.  Slice the onion parallel to the center cut to fully slice.  Add the onion slices to the butter, then add salt and pepper to taste.  When onions begin to soften, lower heat to low-medium, and stir in 1/2 tsp sugar.  Allow to continue to cook, stirring occasionally until onions are soft and golden brown. (About 20 minutes)
4. Open the rolls or buns and broil the interiors on a cookie sheet until toasty.  If you'd like to add cheese, throw it on there pre broiling to make it melty and bubbly (as you will notice in my pic, I forgot to do that- whoops! No melty cheese for us this time!)
5. Add fork fulls of shredded beef and onions to the buns and serve warm.

  1. I am going to bookmark this recipe! I would love to make it for my fiance with our new-ish crockpot! I am normally scared of cooking meat... because I just feel like I don't know what to DO with it! You made it look easy! Hope you have a lovely 3-day weekend!!
