It's Pumpkin Time 'Round Here

It's been a busy, busy time for our family between moving, settling in, finishing the move out of our old home, busy season hitting at work and what feels like a million other things, we were excited to finally have some time over the weekend to enjoy a family trip to the pumpkin patch.  It was a bit tricky to fully get into the whole "autumn-Halloween-changing leaf colors" spirit, as it the temperatures were in the mid-eighties and the sun was beating down on us, but regardless, we had a good time going through the hay bale maze, watching Keegan enjoy his first pony ride and choosing our pumpkins.

We're a serious bunch. Verrrrrry serious.

After work and preschool tonight, our pumpkin fun continued as we carved our masterpieces for the porch.  This year was the first Keegan was old enough to wield a pumpkin knife himself, so he was pretty excited (though his pumpkin definitely benefited from a healthy dose of help from Dad).






The evening ended with the annual "roasting of the pumpkin seeds" (if you throw away the seeds, please, don't tell me, as I think it will cause me to feel physical pain!).  My favorite pumpkin seed recipe is below, tweaked from it's original version (found in Everyday Food mag) as I found the original version to yield some burnt spots.

Sweet 'n' Salty Roasted Pumpkin Seeds
2 cups pumpkin seeds, rinsed and patted dry
2 tbsp granulated sugar
1/2 tsp kosher salt
1/2 tsp cinnamon
2 tbsp butter, melted

1. Spread the rinsed, patted dry seeds on a rimmed baking sheet and bake at 300 degrees for 30 minutes, moving around once with a spoon halfway through the baking time.
2. Toss the seeds with remaining ingredients until evenly coated.
3. Increase oven temperature to 350 degrees, re-spread seeds onto baking sheet, and bake for 7 minutes, stir, then 5 more minutes.  Seeds should be golden brown and crispy.
