Recipe: Korean Style Beef w/ Rice Noodles

This recipe has been sitting in my recipe binder for sometime- talk about a mistake!  Had I known what I'd been missing, I would have made this much sooner.  This spicy and slightly sweet beef and noodle dish will make you want to add this recipe to your regular rotation.  It's quick and easy to put together too.

Korean Style Beef w/ Rice Noodles and Broccoli

What you need:
  • 1.5 lbs top sirloin, thinly sliced against the grain
  • 1/3 c. sugar
  • 6 tbsp soy sauce
  • 4 cloves garlic, grated or finely minced
  • 1.5 tbsp chili garlic paste (from Asian foods section)
  • 1 tbsp vegetable oil
  • 1 tbsp lime juice
  • 1 pkg rice noodles
  • 2 cups broccoli florets

What to do:
1. Mix the sugar, soy sauce, garlic, chili/garlic paste, oil and lime juice in a large zip storage bag.
2. Add the sirloin to the bag and allow to marinate at room temperature for 30 minutes.  Turn halfway through the time.  Reserve marinade after.
3. Heat the grill to medium-low, and place a large pot of lightly salted water on the stove to boil.
4. Place beef on skewers evenly.
5. Grill beef 2-4 minutes or until done.  Remove from grill.
6. Add rice noodles to boiling water and turn off heat.  Allow to sit for 4-5 minutes or until soft.
7. Steam broccoli in a microwave steam bag or lidded microwave steaming bowl until tender crisp.
8. Microwave remaining marinade for 30 seconds (if you are concerned of raw meat bacteria).
9. Toss 2/3 marinade, noodles and broccoli together, serve in bowls and top with beef.
10. Drizzle remaining marinade over beef, then serve.
