My Favorite Pancake Recipe

These pancakes are so tasty!  Tender, not too fluffy, and melt in your mouth delicious.

My Favorite Pancakes
(Adapted from the pancake recipe from Martha Stewart's Bacon Pancakes)

What you need:
1 1/4 c. butter milk (or just add 1 tbsp lemon juice or white vinegar to 1 1/4 c. milk)
2 tbsp melted butter
1 egg
1 tsp vanilla extract or vanilla bean paste (I love the paste!)
1 cup flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp sugar

What to do:
1. If using the "make your own buttermilk" method, do that step first, and allow to set while you combine all dry ingredients in one bowl.
2. Once dry ingredients are combined, add all liquid ingredients to the buttermilk (I like to make the buttermilk in a 2 cup measuring cup to make this step easy) and whisk until smooth.
3. Add liquid ingredients to dry and whisk until smooth.
4. Butter a large skillet or griddle and heat to medium heat.
5. Pour pancake batter onto grill 1/4 cup at a time.  When the pancakes bubble (about 2 minutes) flip and cook for 2 more minutes or until done.
6. Top with butter and syrup and enjoy!  Serve hot.

  1. These look like easy pancakes to make. I love eating pancakes for breakfast, and so do my kids. This recipe looks really simple and quick. I'm sick these days, and have looking for foods to make that won't suck out too much of my energy. I still have to feed the family. My husband cannot cook, unfortunately. Thanks for sharing :)
