What's for dinner this week?

Here's what I'll be cooking up for the family this week:

Sunday: Loaded Potato & Buffalo Chicken Casserole (recipe by Cook Lisa Cook, found on Pinterest) As it is Sunday night while I'm writing this, I can say this recipe is AWESOME! I made a couple of adjustments - 1. Instead of cooking the chicken in the oven after waiting 45 minutes for the potatoes to roast, I cooked the chicken in a pan on the stove over medium heat, then added to the potatoes. (This shaved off about 15-20 minutes of cooking time because I did it during minutes 30-45 of the potatoes roasting.) 2. I added sour cream to the pan once the chicken and potatoes were together, and I stirred to coat before adding the cheese, bacon and green onions. You really should try this recipe, it was delicious!

Monday: Baked Tacos (recipe from Blog Chef, found on Pinterest)
I don't plan to follow this recipe exactly, as I will make my taco meat the way I normally do, but I do plan to try baking the meat and cheese inside the shells when I warm the shells. This seems like a good plan!

Tuesday: Soup, salad and toasted white cheddar garlic bread (Vegetarian-friendly meal)
Trader Joe's will be helping me out with this easy, cozy dinner. I'm going to add potatoes, carrots and whole kernel sweet corn to TJ's Sweet Corn and Roasted Red Pepper Soup (a favorite of mine), then toss together a green salad, slice their white cheddar garlic bread and broil it with a little bit of butter.

Wednesday: Stuffed Spinach and Cheese Crescent Rolls w/ Salad
Since it will be Halloween, I need an easy, but tasty meal that we can scarf before heading out to Trunk-or-Treat. I saw a recipe on Pinterest, that inspired this meal, but I want to make a few tweaks, as the recipe calls for feta cheese, and I'm not so big on feta (or any soft, crumbled cheese really). So, I'll be chopping fresh spinach and tossing it with grated mozzarella and cheddar cheeses and a little bit of Trader Joe's Garlic and Herb Butter, and rolling it into reduced-fat Pillsbury Crescent Rolls.

Thursday: Cinnamon roll waffles, scrambled eggs, apple slices & bacon (Breakfast-for-dinner night)
I've seen it pinned probably 25 times, but apparently you can put cinnamon roll dough in the waffle iron and make a tasty cinnamon roll waffle. I'm going to give this a whirl!  I'll let you know if it works!

Friday: Take-out night (Something relatively inexpensive -- Chipotle, $10 pizza, Panda Express...)

Saturday: Date night out
