What's for dinner this week? 11.25.12

Sunday: We're having an Italian-themed Friendsgiving with a small group of friends, which is great because it gives me the chance to enjoy some Italian food. Our family usually makes Italian food on Thanksgiving (in addition to the turkey) since my mom's parents are both from Italy, but this year, sadly, my family spent the holiday with my grandfather in the hospital, as he just suffered a second stroke. (Prayers and good thoughts for him much appreciated.)

For our meal, I'll be contributing a bacon-wrapped turkey, Spicy Rigatoni with Creamy Garlic Sauce and Butterscotch Gingerbread Cookies

Monday: Green Chile Taco Rice - I'm using this recipe, and layering in lean, taco seasoned ground beef for a one-dish meal.

Tuesday: Cracker Barrel Chicken & Dumplings (I've never made this before, so I'll let you know if it's good, but I'm betting it will be.)

Wednesday: Lazy Tofu Pad Thai - Ramen noodles, tossed with soy sauce, peanut butter, garlic chili paste and a little brown sugar, with stir fried tofu & peas. (Really, it's pretty shameful to even call this "Pad Thai", but it's tasty.)

Thursday: Crock-pot Chicken and Wild Rice Soup (really excited to try this, another new recipe). Photo below is by the original recipe poster, Chef Mommy. Check out her site, she's got some great recipes!

Friday: Take-out

Saturday: Date night (hopefully)
